Ingredients

  • 8 oz soba noodles
  • 1 carrot julienned
  • 1 cucumber seeded and sliced
  • 2 green onions sliced
  • 2 tbsp sesame seeds optional

Dressing

  • 3 tbsp tamari
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 1 tsp honey
  • 1 tbsp olive oil

Instructions

  • Cook soba per package; rinse under cool water and drain well.
  • Whisk dressing; toss noodles with vegetables and dressing.
  • Top with sesame seeds.
