Ingredients

  • 3 lb beef roast top round or similar
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 4 carrots cut into chunks
  • 1 lb small potatoes

Instructions

  • Heat oven to 425°F (220°C). Rub beef with oil, salt, pepper, rosemary, and thyme.
  • Roast beef and vegetables 20 minutes; reduce to 350°F (177°C) and roast 40–60 minutes more, to desired doneness.
  • Rest 10–15 minutes before slicing.

Notes

Use a thermometer for accuracy.
Toss vegetables with oil and salt for better browning.
