Spinach and Feta Stuffed Chicken Breast

Elegant chicken breast stuffed with spinach and feta cheese

This impressive dish looks fancy but is surprisingly easy to make. The combination of spinach and feta creates a delicious Mediterranean flavor.

Ingredients:

  • 4 boneless chicken breasts
  • 2 cups fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • ¼ cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Toothpicks for securing

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Sauté spinach and garlic until wilted. Let cool.
  3. Mix spinach with feta and sun-dried tomatoes.
  4. Cut a pocket in each chicken breast.
  5. Stuff each breast with spinach mixture.
  6. Secure with toothpicks and season outside with salt, pepper, and oregano.
  7. Heat oil in oven-safe skillet and sear chicken until golden.
  8. Transfer to oven and bake for 20-25 minutes until cooked through.
  9. Let rest for 5 minutes before slicing.

Be careful not to overstuff the chicken breasts, and make sure to remove the toothpicks before serving!
